Light, airy, sweet, and creamy; fruit dip was a childhood favorite of mine and still is. Wanting to recreate this American classic I set out to make it SCD friendly. To my amazement this version tastes just like I remember!
Fluffy egg whites provide structure for the airy marshmallow while the honey and vanilla add flavor and sweetness. The cream cheese adds an acidic and tart quality that cuts through the honey nicely and adds balance to this decadent warm weather treat.
If making this fruit dip in advance, be sure to give it a gentle whisk before serving as some separation is natural. I know I will be taking this to every backyard BBQ, dinner party, and Summer holiday this season, and once you try it I know you will too!

Ingredients:
For the Marshmallow Fluff:
½ cup water
¾ cup honey
1 tsp. vanilla extract
2 egg whites
Â
For the Cream Cheese:Â
½ cup dripped SCD yogurt
 Method Of Prep:
- 24 hours before you plan to make your fruit dip, take 1 cup of SCD 24 hour yogurt and place in cheesecloth over a mesh sieve with a bowl underneath. Refrigerate for 24 hours and discard liquid. Keep refrigerated while dripping, and until ready to use.
- In a small saucepan add water, and honey. Bring to a boil, stirring occasionally until soft ball stage is reached using a candy thermometer (240°F).
- While the honey mixture is boiling, place egg whites in your stand mixer bowl and beat on medium-high speed with the whisk attachment until soft peaks form, 4-5 minutes.
- Once honey has reached 240°F, carefully pour a slow small steady drizzle into your stand mixer bowl with the whipped egg whites on low speed until all the honey is combined.
- Turn the mixer to high, and whip for 7-8 minutes or until stiff peaks form.
- Remove bowl from stand mixer base and gently fold in ‘cream cheese’ with a spatula until fully combined.
- Serve immediately and enjoy! Be sure to store leftovers in the fridge in an airtight container.
