Easy Sweet & Savory Summer Tomato Jam

Tomatoes are one of the stars of summer produce, and if you have tomato plants of your own chances are you will have more than you know what to do with soon. This tomato jam is the perfect way to use up those tomatoes and create something the whole family will love!

Tomato jam was invented in 1840 in the US, and shortly thereafter published in The American Farmer. It’s a classic combination of sweet and savory, tart and tangy, and adds depth and layers of flavor to whatever it’s added to.

Easy Sweet & Savory Summer Tomato Jam

Serves 8

Ingredients:

2 lb. ripe tomatoes, plum or Roma 

¾ cup honey

1 tsp. lemon zest  

¼ cup lemon juice, fresh (3-4 lemons)

1 tsp. ginger, fresh and grated 

½ tsp. crushed red pepper 

1 tsp. salt

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Quarter tomatoes, remove and discard core and seeds.
  3. Place tomato quarters in a food processor and pulse just a few times.
  4. Add tomatoes to a thick bottomed pot.
  5. Add in all other ingredients.
  6. Stir to combine, and bring to a boil. Then, reduce to a simmer.
  7. Cook on low, stirring occasionally to prevent burning until the mixture becomes thick, about an hour.
  8. Allow to cool, and place into two half pint jars.
  9. Cover and refrigerate for up to a week. Try this jam with my Thyme and Almond Flour Crackers for a great combination! Enjoy!
