Grilled Pork Chops with Savory Cherry & Mint Sauce

Summertime is undoubtedly all about grilling, and this recipe is no exception. Juicy, tender, pork chops are complemented by the savory and slightly sweet cherry sauce. Accented by fresh, bright mint for depth of flavor and all around balance. We are at the height of cherry season, and while there are undoubtedly a lot of sweet cherry recipes out there, there aren’t as many savory. With this in mind, I wanted to showcase the cherries’ versatility. This may not be the recipe that comes to mind when thinking of cherries, but it certainly will be after you try it! This is one seasonal meal you don’t want to miss!

                                                                                 

Grilled Pork Chops with Savory Cherry & Mint Sauce

Ingredients:

For the Pork Chops:

4 pork chops

2 Tbsp. olive oil 

1 tsp. salt 

¼ tsp. pepper

For the Cherry Sauce:  

2 Tbsp. butter

2 Tbsp. shallot, minced 

½ cup red wine, dry 

2 cups cherries, frozen or fresh, pitted 

⅓ cup honey 

2 Tbsp. white wine vinegar 

½ tsp. salt 

¼ tsp. pepper 

2 Tbsp. mint, chopped or chiffonade

  Method Of Prep:

  1. Gather and prep ingredients.
  2. In a medium pot over medium heat add butter, and allow to melt.
  3. Once melted add in shallots and saute until translucent, about 5 minutes.
  4. Next, deglaze the pan by adding in your wine.
  5. Then add in cherries, honey, red wine vinegar, salt and pepper.
  6. Bring to a boil and reduce to a simmer. Stirring occasionally to prevent burning.
  7. Simmer for 20-25 minutes or until reduced by half and starting to thicken.
  8. When you first reduce your sauce to a simmer, start prepping the pork chops to grill. Preheat the grill to 425°F.
  9. Coat each side of the pork chops in olive oil. Season with salt and pepper, set aside.
  10. Grill each pork chop 4-5 minutes on each side or until the internal temperature reaches 145°F.
  11. Remove from the grill and allow them to rest for 5 minutes.
  12. Add the mint to your cherry sauce and stir to incorporate.
  13. Plate your pork chops and spoon cherry sauce over top. Enjoy!
