Golden and crispy with a hint of honey, graham crackers are a childhood essential. From snack time to s’mores these crunchy crackers made food fun. Drawing on these memories, I set out to recreate the childhood treat to be SCD compliant. What ensued is this recipe and I’m happy to say it’s everything I remember. Warm baking spice and vanilla hum in the background as floral honey adds a light caramelized flavor that’s woven into the toasty golden brown base. Grain-Free Golden Honey Graham Crackers

Ingredients:
2 cups almond flour, sifted
1 tsp. baking soda
¼ tsp. salt
1 egg
2 Tbsp. palm oil, room temperature
2 Tbsp. honey
½ tsp. vanilla
1 tsp. cinnamon (optional)
Method Of Prep:
- Gather and prep ingredients. Preheat your oven to 350°F.
- Grab a sheet tray and line with parchment paper, set aside.
- In a large bowl add sifted almond flour, baking soda, and salt. Mix together.
- Add in egg, palm oil, honey, vanilla, and cinnamon.
- Stir until combined and dough forms. It will be dry at first, but keep mixing until it’s all incorporated.
- Lay a piece of parchment paper on your counter and place the dough ball on top. Place another piece of parchment on top and roll out with a rolling pin until ⅛-¼ inch thick.
- Using a pizza cutter square up the edges and cut the graham cracker into rectangles.
- Using a fork poke holes in each rectangle.
- Transfer to your sheet tray, ensuring that all the dough is touching and in an even layer.
- Reroll edges to make more rectangles until dough is all used up.
- Bake for 18-24 minutes, or until golden brown.
- Remove from the oven and using your pizza cutter cut through where you earlier sliced.
- Let cool completely. Serve right away or store in an airtight container for up to a week. Enjoy!
