Dairy-Free Vanilla Coffee Creamer

I love coffee and always have, but what’s coffee without some creamer? For the first few years on SCD I had only black coffee, cut with water of course to be SCD compliant. I missed my flavored creamers in my morning cup of jo, but just figured it was better for me to skip since I couldn’t find any SCD approved ones on the market. For whatever reason, it hadn’t occurred to me to try and make my own until now, and I’m so happy I did! This vanilla coffee creamer is sweet, velvety smooth, and adds so much depth and flavor. After storing in the refrigerator, you will notice some separation. This is normal as there is no thickening agent and can be remedied by simply giving it a good shake before using. If you love coffee as much as I do, this vanilla creamer is a must!

                     

Dairy-Free Vanilla Coffee Creamer

Serves 6

Ingredients:

1 cup almond milk, no thickeners 

1 cup coconut cream, full fat, no thickeners 

4 Tbsp. honey 

2 tsp. vanilla extract or 1 vanilla bean, scraped 

¼ tsp. gelatin, unflavored

  Method Of Prep:

  1. Gather and prep ingredients.
  2. In a small pot add almond milk, coconut cream, and honey.
  3. Whisk to incorporate ingredients and dissolve the honey.
  4. Bring to a boil over medium-high heat.
  5. Once boiling, remove from heat and add in vanilla.
  6. Let cool for 15 minutes, or until lukewarm.
  7. Add in gelatin and let bloom for 5 minutes.
  8. Add creamer mixture to your high-speed blender and blend for 8-10 seconds or until fully combined and smooth.
  9. Pour into air-tight containers and refrigerate for up to a week.
