A Breakfast Staple Worth Making From Scratch

One of the things I’ve been most excited about since adding oats back into my mSCD diet is getting to experiment with them in the kitchen again. Something as simple as making a batch of oat-based granola feels extra special when it’s a food you haven’t been able to enjoy for a long time.

Growing up, I loved Honey Bunches of Oats cereal. And if we’re being completely honest, sometimes I was less interested in the cereal itself and more interested in digging through the box to find those big, crunchy granola clusters. I loved them with cold milk, and apparently not much has changed!

This homemade Honey Nut Granola gives me a little bit of that same nostalgia, but with ingredients that fit the way I eat today. Whole oats are tossed with pecans, walnuts, almonds, sunflower seeds, warm cinnamon and nutmeg, then baked with honey and coconut oil until golden, crisp, and perfectly crunchy. Raisins add little pops of chewy sweetness to balance all those toasted nuts and oats.
