Easy Savory & Sweet One Pan Dairy-Free Honey Mustard Chicken

Ingredients:

4 boneless, skinless chicken thighs

2 Tbsp. olive oil 

1 cup onion, diced 

4 cloves garlic, minced 

¼ cup bone broth

¼ cup white wine (or replace with bone broth) 

2 Tbsp. Dijon mustard 

2 Tbsp. whole grain mustard 

3 Tbsp. honey 

¼ cup coconut cream, no thickeners 

¼ tsp. rosemary, dried  

¼ tsp. thyme, dried  

¼ tsp. oregano, dried  

1 tsp. lemon juice, fresh 

1 Tbsp. parsley, chopped, for garnish (optional)  

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Heat a large skillet or cast iron over medium high heat.
  3. Season chicken thighs with salt and pepper.
  4. Add olive oil to the pan, then chicken thighs.
  5. Cook until golden brown and 165°F. About 6-7 minutes a side.
  6. Once finished, remove from the pan and set aside.
  7. To the same pan add in onion and sauté until translucent, about 5-6 minutes.
  8. Next, add in garlic and stir until fragrant.
  9. Deglaze the pan with your broth and wine.
  10. Add in mustards, honey, coconut cream, and herbs. Stir to incorporate and bring to a simmer.
  11. Simmer for 3-4 minutes or until starting to thicken. Add in lemon juice.
  12. Then, add chicken back in and spoon sauce over chicken.
  13. Warm the chicken for a few minutes. Garnish with parsley, serve immediately, and enjoy!
