With October coming to a close, I wanted to do one more pumpkin themed recipe before we get into the rush of the holidays, and I promise this recipe was worth the wait!
Soft, chewy, pumpkin infused cookies with a hint of warm baking spice in the background, topped with a smooth, rich vanilla icing. Could you think of anything better for fall?
These make great cookie sandwiches as well, just be sure to make half of the amount of icing since you won’t need as much. Don’t let pumpkin season pass you by before you try these cookies, you’ll thank me later!

Easy SCD Pumpkin Spice Cookies with Vanilla Icing

Ingredients:
For the cookies:
½ cup pumpkin puree, not pumpkin pie filling
⅓ cup almond butter
⅓ cup honey
1 egg
1 tsp. vanilla extract
¾ cup almond flour
1 Tbsp. coconut flour
1 tsp. baking soda
½ tsp. cinnamon
¼ tsp. nutmeg
⅛ tsp. clove
⅛ tap. ginger. ground
¼ tsp. salt
For Icing:
1 ½ cups of palm oil shortening
⅓ cup honey
1 tsp. vanilla extract
Method Of Prep:
- Gather and prep ingredients.
- Preheat the oven to 350°F. Line a large sheet tray with parchment paper and set aside.
- In a large bowl combine pumpkin puree, almond butter, honey, egg, and vanilla extract.
- In a medium bowl add flours, baking soda, spices, and salt. Whisk to incorporate.
- Slowly add your dry ingredients to your wet.
- Stir to combine until it resembles batter.
- Using a cookie scoop, scoop cookie dough, and place about an inch apart on the sheet tray.
- Repeat until all cookie dough is used.
- Bake for 12-15 minutes or until cooked through and lightly golden.
- Remove from the oven and allow to cool.
- While cooling we can work on our icing. Set up your stand mixer with the whisk attachment, or set up your electric hand mixer.
- Add all icing ingredients to your mixer or bowl and mix on medium speed until combined.
- Ice cookies, serve immediately, and enjoy!
