Grain-Free Cranberry Orange Holiday Scones

Happy Holidays! Nothing says Christmas to me quite like the classic combination of orange and cranberry. I love having these scones with my coffee on Christmas morning, and this recipe is so good I think it may become tradition!

I don’t know about you, but in our house Christmas morning is always a whirlwind of activity. Making these scones the night before is the perfect way to have a festive breakfast that is super easy and ready to go amidst all the chaos.

Crumbly, buttery, almost pound cake-like texture makes up the base of this scone, while sweet notes of honey, bright citrus, and tart cranberry round out its festive flavor profile. You might want to make a double batch of these scones because they will go fast! Happy Holidays, enjoy!

Grain-Free Cranberry Orange Holiday Scones

Ingredients:

1 ¼ Cups almond flour

½ cup coconut flour 

1 tsp. baking soda

¼ cup ghee, butter, or coconut oil, melted

2 tsp. orange zest 

2 Tbsp. orange juice, not from concentrate 

2 Tbsp. honey 

1 egg

¼ cup almond milk, no thickeners 

¼ cup cranberries, dried & no sugar added

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 350°F. Line a baking sheet with parchment paper, set aside.
  3. In a large bowl whisk together flours and baking soda.
  4. In a medium bowl combine butter, orange zest, orange juice, honey, egg, and milk. Whisk together to evenly incorporate the wet ingredients.
  5. Slowly add the wet ingredients to the dry. I usually add the wet mixture in thirds or quarters.
  6. Mix together until dough forms.
  7. Gently fold in dried cranberries.
  8. Place dough on a lined baking sheet.
  9. Shape into a large flat circle about 7-8 inches in diameter.
  10. Cut into eight equal pieces. Gently spread the scones apart to bake, leaving about 1 inch between them.
  11. Bake for 20 minutes, or until cooked through and lightly browned.
  12. Remove from the oven to cool slightly and enjoy! These scones can be enjoyed hot or at room temperature and are sure to add some cheer to your holiday!
