Grilled Pork Chops with Sage Butter & Pickled Peaches

These grilled pork chops with sage butter and pickled peaches will be the star of any meal! I remember having pickled peaches at my grandpa’s house fresh out of their cellar. Sweet and tart with warm baking spices surrounding, the flavors meshed so well together I was hooked! Altogether, those sweet and tart peaches with creamy butter, earthy time, and juicy tender char-grilled pork are sensational! Remember, you can always make the pickled peaches, and sage butter ahead to really make this meal in a sinch! If you happen to have left over pickled peaches they will stay good in the refrigerator for up to two weeks. This happens to be one of my favorite ways to enjoy a pork chop, and after tasting it, I know it will be yours too!      

Grilled Pork Chops with Sage Butter & Pickled Peaches

Ingredients:

For Pickled Peaches: 

½ Cup white distilled vinegar

½ Cup champagne vinegar 

1 Cup water 

2 Tbsp. honey

1 Star anise 

1 Bay leaf

½ tsp. yellow mustard seeds 

½ tsp. black mustard seeds

¼ tsp. salt 

4 Peaches, ripe but firm, pitted and diced

 

For Butter: 

¼ Cup butter or ghee 

2 Tbsp. sage, fresh, chopped  

1 Clove garlic, grated 

 

For Chops:

4 Pork chops, bone in preferably organic

2 Tbsp. olive oil

      Method Of Prep:

  1. Gather and prep ingredients. Start with the pickle for the peaches.
  2. Pit and small dice peaches, place them evenly divided in two-pint size mason jars, set aside.
  3. In a small pot add both vinegars, water, honey, star anise, bay leaf, mustard seeds, and salt.
  4. Bring to a boil and then remove from heat, pour over the diced peaches enough to cover.
  5. Set aside to cool for 20 minutes, then refrigerate until ready to use. If you want them to be nice and cold you can always make the pickled peaches a day ahead.
  6. Next, preheat the grill to 500°F.
  7. Coat pork chops with olive oil, salt, and pepper. Set aside until the grill is heated and ready.
  8. While waiting for the grill to come to temp, make the sage butter. In a small bowl, place butter or ghee, sage, garlic, salt and pepper.
  9. Mash with a fork and mix until incorporated. Place in a small serving dish, set aside.
  10. Now that the grill is preheated, we can grill the pork chops. Place face down on grill for 4-5 minutes on each side or until desired doneness is achieved, at least 145°F.
  11. Remove chops from the grill and rest for 5 minutes.
  12. While the meat is resting, gather dinnerware, pickled peaches, and sage butter.
  13. To plate, place pork chop down first, then sage butter, followed by pickled peaches and enjoy!
