Grilled Skirt Steak with Chimichurri Sauce

Chimichurri is a traditional red meat sauce from Argentina & Uruguay and is made from parsley, garlic, olive oil, chili peppers, oregano, and red wine vinegar. It is savory, herbaceous, slightly spicy, and has a rich texture that amplifies anything grilled. Chimichurri balances the char-grilled flavor with fresh, pungent, and tangy goodness you will want every last drop of! It is traditionally used on meat, but a great vegan option is to put it on cauliflower ‘steaks’! This grilled summer dish is a family favorite of ours, and after you try it, you’ll see why! Grilled Skirt Steak with Chimichurri Sauce

Ingredients:

For the Chimichurri: 

½ cup olive oil 

2 Tbsp. red wine vinegar 

1 cup parsley (1 large bunch)

2-3 red chilis, dehydrated and deseeded (or red pepper flakes)

4 cloves garlic 

1 tsp. oregano, dried 

½ tsp. salt 

¼ tsp. pepper 

 

For the Steaks: 

2 lbs. Skirt steak or thinly cut steaks 

1 Tbsp. olive oil 

½ tsp. salt 

¼ tsp. pepper

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat your grill to 500°F.
  3. Start by making the chimichurri sauce. In a food processor add all ingredients for the sauce.
  4. Pulse until the parsley and chilis are in small chopped pieces. The oil will partially separate from the parsley mixture, this is traditional in style to this sauce. If you prefer your sauce to be emulsified you can use your blender to blend all your sauce ingredients on high until smooth.
  5. Now, we will divide our sauce equally into two containers.
  6. In a large bowl add steaks, 1 Tablespoon of olive oil, salt, and pepper. Mix thoroughly.
  7. Next, add half of your sauce and mix to coat.
  8. Place steaks on the grill and sear each side 2-3 minutes.
  9. Remove to rest for 5 minutes. While resting, set up a large cutting board and grab a sharp chef’s knife or slicing knife.
  10. Lay each steak on your cutting board and cut against the grain into strips. Repeat until all the steak is cut.
  11. Place steak on a serving tray and pour the remaining half of the sauce on top.
  12. Serve immediately and enjoy!
