Non-Alcoholic SCD New Year’s Punch

Happy New Year’s Eve! For as long as I can remember my family has always made punch for this holiday, so naturally, I had to keep the tradition alive. The great thing about making a bowl of punch is that you can make it once, and enjoy it all the way up until the ball drops! In keeping with this tradition, I have made this as close to the recipe we used while maintaining SCD compliance. Be sure to purchase juices that are free from additives and sugar, or make them yourself. I have found that Lakewood and R.W. Knudsen both make juices that are generally SCD compliant, but be sure to read the label. This punch encapsulates the holiday spirit with sweet apple juice, warm baking spice, tart and bright cranberry, citrusy orange, tropical pineapple, and peppery sweet and bubbly ginger ale. Non-Alcoholic SCD New Year’s Punch

Ingredients:

1 cup apple juice, no sugar added 

2 cinnamon sticks

2 star anise 

2 cloves, whole 

2 ½ cups cranberry juice, no sugar added, not from concentrate  

1 cup orange juice, no sugar added, not from concentrate 

1 cup pineapple juice, no sugar added 

½ recipe of homemade ginger ale 

  Method Of Prep:

  1. Gather and prep ingredients.
  2. In a small pot add apple juice and spices. Simmer for 5-8 minutes to impart the spice flavor.
  3. Remove from heat and cool completely.
  4. In a large punch bowl or pitcher add cooled apple juice followed by all ingredients.
  5. Stir gently to incorporate.
  6. Add ice if desired, and serve immediately and enjoy. Cheers to the New Year!
