SCD Homemade Peppermint Marshmallows

Marshmallows are a holiday must, and these homemade peppermint flavored ones can’t be beat! Easy to whip up, and fun for the whole family you will want to make these all year round! If you don’t like peppermint, feel free to substitute vanilla extract instead. The hardest part of this recipe is waiting for them to set, but patience is a virtue and I guarantee these are worth the wait! Airy, sweet, and bursting with cooling peppermint flavor, these marshmallows are a great treat on their own, or with your favorite hot drink. After whipping, I like to spread the marshmallow mixture out onto a half sheet tray so the finished product has more height. You can also make these more holiday-themed by cutting out the set marshmallows with holiday-shaped cookie cutters, just be sure to grease the cutters with coconut oil to prevent sticking. Ingredients:

1 cup water 

3 packets of gelatin, unflavored (¾ oz.) 

¾ cup honey 

1 tsp. peppermint extract

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Line a half sheet tray with parchment paper and set it aside.
  3. In your stand mixer add ½ cup of water and gelatin. Let sit to bloom for 10 minutes.
  4. While waiting add the remaining water to a saucepan and add honey.
  5. Bring to a boil for 12-15 minutes or until it reaches about 240°F with a candy thermometer.
  6. Turn on the stand mixer to low and slowly drizzle in your honey.
  7. Once it is all added slowly pour in your peppermint extract.
  8. Turn up the speed of the mixer to medium and continue to whip for 9-10 minutes or until fluffy and tripling in volume.
  9. Turn it out onto your sheet tray and smooth it with a spatula. Be sure to do this quickly as the gelatin will begin to set.
  10. Allow to cool and stand at room temperature for 4-6 hours or until completely set.
  11. Grease a knife with coconut oil and cut it into 24 squares.
  12. Now the marshmallows are ready to be enjoyed! Happy holidays!
