Growing up in the cold Midwest winters, meatloaf was one of my favorite comforting meals. I wanted to play on those fond memories, but make the recipe my own. After several attempts to make the ketchup just right, and achieve the right texture and flavor for the meatloaf, I’m proud to say this recipe is pretty perfect.
I chose to replace the traditional ground beef with ground turkey. This not only makes for a better texture, but is easier to digest. Since I wanted to keep this recipe egg-free, almond flour is what holds this delicious hearty loaf together. The honey and vinegars add a nice umami element that is balanced out by the sweet caramelized onions and earthy herbs. The tangy and savory ketchup ties it all together, and provides a nice outside coating of extra flavor.
Please note that the ketchup recipe will yield more than you need, but I wanted to make enough so there would be extra to top each slice if desired. This is a meal the whole family will love! Not only is it easy to prepare and a classic comfort dish full of familiar flavors, but it freezes well too and can easily be made ahead of time. SCD Turkey Meatloaf with Easy Homemade Ketchup

Ingredients:
For the Ketchup:
24 oz. strained tomatoes, no added sugars
3 Tbsp. tomato paste, no additives
¼ cup apple juice, no additives, not from concentrate
2 Tbsp. apple cider vinegar
¼ cup honey
2 cloves garlic, minced
½ tsp. salt
¼ tsp. clove, ground
For the Meatloaf:
1 ½ cups onion, yellow or white, diced and sauteed
8 cloves garlic, minced
48 oz. ground turkey
1 ½ cups almond flour
2 Tbsp. tomato paste, no additives
1 Tbsp. red wine vinegar
1 Tbsp. apple cider vinegar
2 Tbsp. honey
½ cup SCD ketchup (above)
2 tsp. basil, dried
2 tsp. oregano, dried
3 tsp. parsley, dried
2 tsp. salt
1 tsp. black pepper, ground
1 cup SCD ketchup (for topping)
Method Of Prep:
- Gather and prep ingredients. In a medium pot add all ingredients for ketchup.
- Whisk together, and bring to a simmer for 5-8 minutes or until honey has dissolved and the mixture starts to thicken up.
- Remove from heat and set aside.
- Preheat the oven to 375°F and line a sheet tray with foil, set aside.
- Next, heat a large skillet on medium and add in a drizzle of olive oil. Add onions and saute until cooked through and translucent.
- Add in garlic and sauté for 1-2 minutes until fragrant.
- Remove from heat and set aside.
- In a large bowl add all other ingredients for meatloaf including the onion mixture. Remember to only add ½ cup of the ketchup to the meatloaf mixture. Reserve the other cup for the top of the meatloaf.
- Mix thoroughly and place mixture on your sheet tray. Shape into a loaf.
- Bake for 40-45 minutes or until the internal temperature reaches 155°F.
- Remove from the oven and brush on the remaining cup of ketchup.
- Return to the oven for 10 minutes or until the internal temperature reaches 165°F.
- Remove from the oven and rest for 10 minutes.
- Slice into 8 pieces and serve immediately. Enjoy!
