Easy Spice Rubbed Salmon with Creamy Dill & Lemon Sauce

This easy salmon recipe with creamy dill and lemon sauce is ready in under thirty minutes, nutritious, and packed with protein and flavor to spare. The perfect ode to the coming season of Spring, you will want to remake this recipe all the way until Summer comes!

Try to get wild caught salmon instead of farm raised if you can. Don’t skip the step of patting the salmon dry, the spice mix will stick much better instead of running off with the olive oil during cooking.

This salmon has the perfect combination of spice and cool creamy sauce. The spice is mild, but still wakes up the taste buds while the sauce brings tart acidity from the lemon, and a fresh herbaceousness from the dill. All of this held together by the velvety smooth yet thick yogurt. This salmon is sophisticated enough for weekend dinner guests, and easy enough for a weekday family meal. Easy Spice Rubbed Salmon with Creamy Dill & Lemon Sauce

Ingredients:

For the Salmon: 

4 salmon filets, wild caught, patted dry 

2 Tbsp. olive oil  

2 tsp. paprika

½ tsp. black pepper, ground 

1 tsp. thyme, dried 

1 tsp. oregano, dried 

½ tsp. cayenne 

1 tsp. salt 

 

For the Sauce:

½ cup SCD yogurt, dripped for 24 hours 

1 Tbsp. dill, fresh and chopped (a few sprigs for garnish)

2 cloves garlic, minced 

1 Tbsp. lemon juice, fresh 

1 Tbsp. honey 

¼ tsp. salt 

1 lemon, quartered for garnish (optional)

  Method Of Prep:

  1. A day before you make this recipe take 1 ½ cups of SCD yogurt and place in a cheesecloth lined strainer over a bowl. Place in the fridge, and drain away liquid when ready to use. The yogurt will be thick like cream cheese or Greek yogurt.
  2. Gather and prep ingredients.
  3. Line a sheet tray with parchment paper and set aside.
  4. Preheat your oven to 375°F.
  5. Unpackage and pat dry your salmon filets with a paper towel and place skin side down on your sheet tray.
  6. In a small bowl combine all spices and olive oil.
  7. Brush or rub your salmon filets with this spice mixture.
  8. Bake for 10-12 minutes or until firm, or internal temperature reaches 145°F.
  9. While salmon is baking in a small bowl add all your sauce ingredients. Stir to combine.
  10. Remove salmon from the oven, plate, and top with dill sauce.
