Soft & Chewy Peanut Butter Cookies with Almond Flour

Serves 24 (1 each)

Ingredients:

½ cup peanut butter, smooth, no sugar added, 100% peanuts 

¼ cup butter, softened 

½ cup honey 

1 egg

1 tsp. vanilla extract 

2 cups almond flour

¼ cup coconut flour 

½ tsp. baking soda 

¼ tsp. salt

  Method Of Prep:

  1. Gather and prep ingredients. Line a large sheet tray with parchment paper. Preheat your oven to 350°F.
  2. Set up your stand mixer with paddle attachment, or a large bowl with your electric hand mixer.
  3. Add in peanut butter, butter, and honey.
  4. Mix on medium speed for 30-60 seconds or until fully combined.
  5. Add in egg and vanilla extract. Beat for 10 seconds or until combined well.
  6. Add in almond flour, coconut flour, baking soda, and salt. Mix on medium until combined.
  7. Using a cookie scoop (about 1 tablespoon) Scoop out dough and roll into a ball.
  8. Place on a sheet tray about an inch apart, and repeat until all dough is rolled. You should get 24 cookies.
  9. Now using a fork gently press each ball horizontally and vertically to create the classic criss cross on peanut butter cookies.
  10. Bake for 8-10 minutes or until lightly golden and cooked through.
  11. Cool on a wire rack, serve immediately and enjoy!
