Super Bowl SCD Jalapeño Poppers with Bacon

The Super Bowl is just around the corner, and no matter who you’re rooting for this event undoubtedly calls for finger foods. These SCD Jalapeño Poppers are the perfect way to celebrate and indulge in some familiar football party flavors, while following SCD. If you’re going to a Super Bowl party this year, these are a great appetizer to take so you know you have something to eat, and something everyone else will enjoy too! 

These jalapeño poppers pack some serious flavors with a creamy filling that everyone will love. Slight heat from the jalapeño itself comes through but is balanced by the savory bacon, smooth ‘cream cheese’, and salty cheddar, all topped off with a mild herbaceousness from the garlic and green onion. Super Bowl SCD Jalapeño Poppers with Bacon

Ingredients:

8 jalapeño peppers, halved lengthwise and deseeded

1 cup SCD dripped yogurt

1 cup mild cheddar cheese, shredded from block

2 cloves garlic, minced 

2 Tbsp. green onion, sliced 

4-5 pieces of bacon, no sugar added, cooked, and chopped 

½ tsp. salt

¼ tsp. pepper

  Method Of Prep:

  1. Gather and prep ingredients. Preheat the oven to 400°F and line two sheet trays with aluminum foil, and set aside.
  2. On your first sheet tray lay out your bacon strips and cook for 10-12 minutes or until crispy. Remove from the oven to let cool.
  3. While bacon is cooking, slice your jalapeños lengthwise and remove seeds and membranes.
  4. Place jalapeños face up on your sheet tray. Chop up bacon and set aside.
  5. In a large bowl add dripped yogurt, cheddar cheese, garlic, green onion, and bacon.
  6. Stir to combine.
  7. Fill each jalapeño half with the mixture and bake for 18-20 minutes or until golden. If you feel they could be a bit more crispy you can always broil them for a few minutes, but keep a close eye on them so they don’t burn.
  8. Remove from the oven and place on a serving tray.
  9. Serve immediately and enjoy! Happy Super Bowl!
