Easy Dairy-Free Lemon Mousse

Easy Dairy-Free Lemon Mousse

Ingredients:

⅓ cup water  

1 tsp. gelatin, plain unflavored

⅓ cup lemon juice, fresh (about 4 lemons)  

1 Tbsp. lemon zest (about 3-4 lemons) 

â…” cup almond milk*, no thickeners or additives

â…” cup coconut cream, full fat, no thickeners or additives

1 Tbsp. + 1 tsp. honey 

 

*You can use full fat coconut milk for a nut free alternative

  Method Of Prep:

  1. Gather and prep ingredients.
  2. In a small saucepan add water and gelatin. Allow to sit and bloom for 5 minutes.
  3. In your high-speed blender combine lemon juice, lemon zest, almond milk and coconut cream. Wait to blend.
  4. Bring gelatin and water mix over low heat. Allow the gelatin to melt. This should only take a minute or two.
  5. Once it has dissolved, remove from heat and whisk in honey.
  6. Once the honey has been whisked in, slowly pour the gelatin mixture into the blender with other ingredients.
  7. Blend on high for 10-12 seconds or until fully incorporated and the coconut cream is smooth.
  8. Pour into 4 ramekins or glasses.
  9. Place in the refrigerator to fully set for at least two hours.
  10. Once set, garnish with a lemon slice or lemon zest and serve immediately. Enjoy!
