Blackened Salmon with Mango Salsa

This blackened salmon with mango salsa is refreshing and tropical with just the right kick of spices. Easy to make and flavor packed with a stunningly beautiful color display, this easy salmon will impress any dinner guest. Perfectly crusted and flakey salmon is encased in warm spices and topped with fresh mango salsa. The mango salsa brings sweet, citrusy, and clean flavors to cut through the spice and pairs effortlessly. The blackening seasoning is on the spicy side, so if you prefer a more mellow flavor, you can cut the chili powder and cayenne in half or remove them altogether. Traditionally blackening seasoning calls for onion and garlic powder. However, these are not SCD legal due to a starch added in them that you may or may not find on the label. If you make your own or can get them from an SCD legal source, feel free to add them. Otherwise, I would skip them as I have, but I promise you won’t even miss them! This recipe is a gem and offers a flavor paradise that you will want to get lost in again and again.

                     

Blackened Salmon with Mango Salsa

Ingredients:

For Salmon: 

4 salmon filets, wild caught

¾ Tbsp. paprika

½ tsp. black pepper, ground 

1 tsp. thyme

1 tsp. oregano 

½ tsp. cayenne 

1 ½ tsp. salt 

2 Tbsp. Olive oil, divided 

  

For Salsa: 

2 cups mango, fresh and cubed

½ cup red onion, small dice 

1 jalapeno, deseeded and diced small
½ cup cilantro, chopped (about 1 bunch) 

1 oz. lime juice, fresh (1 large lime)

1 tsp. salt

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 400°F.
  3. Begin by patting salmon dry on both sides with a paper towel.
  4. In a small bowl combine paprika, pepper, thyme, oregano, cayenne, and salt.
  5. Rub salmon liberally with the blackening seasoning.
  6. Using half of your olive oil, coat the salmon.
  7. Add the remaining half to a large pan or cast-iron skillet. Bring the pan to medium high heat.
  8. Place salmon filets skin side up in your pan and allow to sear for 2-3 minutes or until a nice crust has formed.
  9. Flip salmon over and place the pan in the oven.
  10. Allow to bake for 10-12 minutes or until salmon is cooked through and easy to flake with a fork.
  11. While salmon is baking, combine all your salsa ingredients in a medium bowl.
  12. Mix to incorporate, set aside.
  13. Once the salmon has come out of the oven, we are ready to plate. Place salmon skin side down on a plate and top with fresh mango salsa.
  14. Serve immediately and enjoy!
