Grain-Free Mother’s Day Quiche Lorraine

Mother’s Day Brunch or serving her breakfast in bed is a tradition for many, and this Quiche Lorraine is perfect for just that! Although this particular quiche is unmistakably French, as it comes from the Lorraine region of France, quiche itself actually originated in Germany. In fact, the word quiche comes from the German word “kuchen” which means cake. This open-faced pie originally included only eggs, cream, and lardons (fatty pork). Today there are many versions but the most popular came about in 1950’s Britain and America and is now known to contain eggs, heavy cream, bacon, Gruyere, and caramelized onions. 

This quiche is not only delicious and a complete meal in itself, it can even be made the day before and warmed back up in the oven before serving. This allows for easy entertaining or some extra time to help the kids wrap mom’s gifts. All in all, this quiche offers a stunningly beautiful mosaic of its ingredients and a flavor like none other! Light and fluffy eggs are surrounded by salty and crispy bacon, sweet caramelized onions, ooey gooey cheese, and creamy coconut, all encased in a flaky, buttery crust. What more could mom ask for? Grain-Free Mother’s Day Quiche Lorraine

Ingredients:

For the Crust:

2 ½ cups almond flour

2 Tbsp. coconut flour 

¼ tsp. salt

1 egg

¼ cup of butter or coconut oil, melted

 

For the Filling: 

½lLb. bacon, no sugar added, chopped 

1 cup onion, sliced 

2 cloves garlic, minced 

5 eggs, beaten 

3 Tbsp. coconut cream, no thickeners or additives 

½ cup gruyere, grated from block 

½ cup parmesan, grated from block 

½ tsp. salt

¼ tsp. pepper  

2 Tbsp. chives, chopped, plus extra for garnish

  Method Of Prep:

  1. Gather and prep ingredients.
  2. Preheat the oven to 350° F. Grease a tart pan with a removable base well with butter or coconut oil.
  3. In a large bowl mix together almond flour, coconut flour, and salt.
  4. Add in egg and butter or coconut oil.
  5. Mix together until ingredients are well incorporated and you can form a ball. This dough will be dry and crumbly in texture.
  6. Press the dough into an even layer in the bottom of the tart pan, and up the sides to form the crust.
  7. Take a fork and poke holes in the bottom of the crust to prevent bubbling.
  8. Bake for 12-15 minutes or until lightly golden brown.
  9. Remove from the oven and cool while preparing the filling.
  10. In a large pan add chopped bacon and render until cooked.
  11. Remove with a slotted spoon and set aside.
  12. Add onion to the same pan with the bacon grease.
  13. Sauté for 10-12 minutes or until caramelized, add in garlic and sauté another 1-2 minutes until fragrant. Remove with a slotted spoon and set aside.
  14. In a large bowl add eggs and coconut cream. Whisk for 1-2  minutes.
  15. Add in bacon, onions, garlic, cheeses, salt, pepper and chives.
  16. Remove the crust from the oven and fill with the egg mixture.
  17. Bake for 30-35 minutes or until the egg is set. If the crust starts to brown too much cover with foil.
  18. Remove from the oven to cool for 10 minutes.
  19. Top with chives, slice into eight pieces, and serve immediately. Enjoy!
