School lunches, rainy Saturdays, or a sick day in; this lemon jello is sure to add a little fun and flavor. While not using the oh so familiar box jello mix can seem daunting, this recipe is a breeze and even one the kids could do on their own. (With a little supervision of course.)
I dare to say this jello is even better than the box version as it has real lemon flavor rather than artificial flavorings and colorings of the store brand.
The bright, clean, and tart lemon shines through with a hint of sweetness on the finish from the honey. The gelatin provides structure and texture of the jello, as well as the fun wiggle we all love. Once you try this lemon jello, you won’t want to go back!
Refined Sugar-Free & SCD Easy Lemon Jello

Ingredients:
½ cup lemon juice, fresh squeezed and strained (about 5 lemons)
1 ½ cups water
2 Tbsp. gelatin, unflavored (I use Knoxx)
¼ cup honey, lightly colored
Method Of Prep:
- Gather and prep ingredients.
- Begin by juicing your lemons.
- Once juiced, pour the juice through a strainer to catch all the pulp.
- Add strained juice to a medium saucepan.
- Next, add your water.
- Now sprinkle your gelatin evenly over the surface of your lemon water mixture. Allow this to sit or ‘bloom’ for 3-4 minutes.
- After time has elapsed, turn this mixture on medium heat and whisk occasionally until gelatin is dissolved. This will take 3-4 minutes.
- Once gelatin has dissolved, remove from heat and stir in your honey until it completely dissolves.
- Pour immediately into whatever container you want the jello to set in.
- If you want your jello to be smooth on top, poke any bubbles that have formed with a fork.
- Carefully place in the refrigerator for 3 hours or until set completely.
- Cut into squares, serve immediately, and enjoy!
