Simple & Refreshing Strawberry, Mango, Avocado Salsa with Honey Lime Vinaigrette over Grilled Chicken

With the warmer weather finally here, grilling season is just starting to get underway! I couldn’t think of a better way to do that than with this fresh & fruity strawberry salsa with honey lime vinaigrette over grilled chicken. Sweet, peak season strawberries, tropical mango, and creamy avocado, are balanced by zesty jalapeno and red onion. Toss in bright cilantro, citrusy lime, and floral honey over charred juicy chicken. Believe me when I say this is the Spring flavor combination you have been waiting for!   

This salsa is best consumed the day of. If you want it for more than one day, I recommend grilling the chicken in advance, but making another batch of salsa the next day so it’s as fresh as possible. This salsa also goes well with fish, or is even good as a dip with my Thyme Almond Flour Crackers! Anyway you serve it, this will be a new Spring recipe staple!

                                                                                              

Simple & Refreshing Strawberry, Mango, Avocado Salsa with Honey Lime Vinaigrette over Grilled Chicken

Ingredients:

For the Salsa: 

1 ½ cups strawberries, diced (½ pint) 

1 cup mango diced, (1½-2 mangoes) 

1 avocado, large, diced

1 jalapeno, deseeded, & diced

¼ cup red onion, diced

1 Tbsp. cilantro 

¾ tsp. salt 

¼ tsp. pepper 

 

For the Honey Lime Vinaigrette: 

1 clove garlic, minced 

2 tsp. lime zest, about 1 lime 

2 Tbsp. honey 

2 tsp. Dijon mustard 

3 Tbsp. lime juice, fresh (2-3 limes)  

½ tsp. salt 

¼ tsp. pepper

¼ cup olive oil, extra virgin   

 

For the Grilled Chicken: 

4 chicken breasts 

1 Tbsp. olive oil 

½ tsp. salt

¼ tsp. pepper

  Method Of Prep:

  1. Gather and prep ingredients. Start by preheating your grill to 500°F.
  2. Coat chicken breasts in olive oil and season with salt, set aside.
  3. While waiting for your grill to preheat, we will make our salsa. Prep and place all ingredients for salsa into a medium bowl and mix together.
  4. Lay a piece of plastic wrap over the salsa to keep fresh. Be sure to place plastic wrap directly on salsa to avoid oxidation of the avocado while we prepare the rest of the meal. You can also squeeze a little lemon juice over the avocado after cutting.
  5. Next, gather ingredients for dressing. Add all ingredients except for the olive oil.
  6. Slowly pour olive oil into the bowl with other dressing ingredients and continuously whisk until emulsified, set aside.
  7. Once the grill is preheated, cook chicken 5-7 minutes on each side or until chicken reaches 165°F.
  8. Remove from the grill.
  9. Pour lime dressing over strawberry salsa and mix well.
  10. Plate grilled chicken and top with your salsa.
  11. Serve immediately and enjoy!
