This American classic surfaced in the early 1920’s in a cookbook calling it a ‘graham cracker sandwich’. However, in the text it mentions it is already a hit with boy scouts meaning it got its start earlier than the publication.
Golden, crunchy, honey-baked graham crackers make way for soft, fluffy, caramelized and toasted marshmallows. Atop a decadently sweet square of cocoa butter infused chocolate. There is nothing quite like it!
I, probably like you, have fond memories of smores on summer nights. Even though I am an adult now, I still hold a special place in my heart for this quintessential summer treat.

The Best ‘White Chocolate’ SCD Summer S’mores

Ingredients:
For the ‘white chocolate’:
½ cup cocoa butter, melted
¼ cup cashew butter, raw
¼ cup honey
pinch of salt
1 batch of SCD graham crackers
½ batch of SCD marshmallows
Method Of Prep:
- Gather and prep ingredients. Make marshmallows and graham crackers in advance.
- Melt your cocoa butter in a microwave safe dish at intervals of 30 seconds until completely melted.
- Carefully remove from the microwave and whisk in cashew butter and honey until fully incorporated.
- Place your silicone candy bar molds on a sheet tray. Pour ‘white chocolate’ mixture into molds, just to fill them.
- Freeze for thirty minutes or until completely hardened.
- Remove from the freezer.
- Now we can assemble our s’mores. Toast your marshmallows first if desired. You can toast them over a campfire, or use a small food safe torch. These marshmallows will melt a bit faster than their store-bought counterparts, so don’t roast them quite as long or they may melt.
- Place a graham cracker on a plate, top with some of your ‘white chocolate’ squares, then your marshmallow.
- Follow this with another graham cracker on top. Enjoy your treat! Happy summer!
